Delicious ‘Duck’ Spring Rolls

These delicious ‘duck’ (meat alternative) spring rolls are honestly divine served with spiced roasted veggies dipped into a homemade soy & sesame dip. Serve alongside edamame beans. This was a panic fridge raid that turned out sublime..
Ingredients
- vegetable oil
- 1 x onion
- 2 garlic coves, crushed
- 1/2 cauliflower
- 1/2 squash
- 2 carrots
- ‘duck’ meat alternative
- 2 tsp smoked paprika
- 1 tsp cayenne pepper
- 1/2 tsp turmeric powder
- 1 tsp chilli powder
- salt and pepper
- rice papers x15
Homemade dipping sauce:
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 1 tsp sesame seeds
You can use any vegetables to roast, these are just the ones I had in the house.
Method
- Roast all your veggies with vegetable oil at 200 degrees for 30-40 minutes until browned
- Meanwhile, cook the ‘duck’ according to packet instructions
- Place each rice paper under cold water for 5 seconds. Place them on a flat surface that makes it easy to roll
- Add some ‘duck’ and veg to each piece of rice paper. Don’t fill it too much else it will rip. TOP TIP: double wrap them using 2 rice papers for more secure and substantial spring rolls.
- Fry them in a little bit of oil on a high heat for 3-4 minutes each side, turning as they brown
- Serve with edamame beans and a delicious dip!
