Delicious Traybake: Salmon, Leek & Potato

Serves 2: This delicious traybake is not to be missed! It’s nutrient-rich and involves very little time in the kitchen so you can get on with other things whilst you are waiting for it to cook.
Ingredients
- 2 Salmon fillets
- 1 large leek, washed and chopped
- 1 onion, sliced
- 2 garlic cloves, minced
- 250g baby potatoes, thinly sliced
- 1 tbsp capers
- 3 dollops of greek yoghurt
- 1 tbsp dried mixed herbs
- salt and pepper
- olive oil
Method
- Preheat oven to 200 degrees.
- Chop all your vegetables
- Roast the potatoes, onion, garlic and leeks in a little oil and mixed herbs for 25 minutes. Turn the oven down to 180 degrees and add the salmon fillets and cook for another 15 minutes or until cooked through.
- Prepare the kale. Remove any hard stems and massage for 30 seconds to make it less stiff
- Remove the traybake from the oven, stir in the kale, capers, greek yoghurt, lots of black pepper, salt.
- Enjoy :))
