Delicious Tofu & Coconut Veggie Noodle Soup
This delicious tofu & coconut veggie noodle ‘soup’ is so comforting, warming and is nutrient-rich, high in protein and fibre and pregnant-friendly.

Tip: Eating with chopsticks helps you to eat slower which can help with digestion.

Serves 2

Ingredients

  • Rice noodles
  • 250ml coconut milk
  • 1 litre veggie stock
  • 2 cloves garlic
  • 1 wedge of ginger, grated
  • 1 lime
  • 4 large broccoli florets (i used frozen)
  • 1 courgette
  • Handful green beans
  • Edamame beans
  • 1 block tofu
  • Coriander
  • Salt and pepper
  • 1 tsp turmeric

Method

  1. Slice the tofu into cubes and fry tofu for 5-7 mins on a high heat in a little oil turning frequently until golden. Set aside
  2. On a medium heat, fry the garlic, ginger for 1 min, then add the coconut milk. Add in your vegetables and turmeric powder. Cook for a few mins until boiling. Add the stock and let it simmer for 10 mins. Add the noodles, rice noodles take 5 mins to cook. Then stir in the coriander, lime juice, salt, pepper and tofu.
  3. Serve and enjoy ☺
