Rice Buddha Bowl

Serves 1:

Ingredients

  • wild rice (I use left overs, use packet rice if you want to speed up the process)
  • halloumi
  • 2-3 tbsp black beans
  • 2-3 tbsp sweetcorn
  • 2 tbsp pineapple
  • 1/2 avocado
  • sriracha
  • coriander

Method

  1. Cook the rice for 18-20 minutes or according to packet instructions
  2. Fry the halloumi on a medium heat until browned and flip
  3. Add black beans, sweetcorn, pineapple, avocado, sriracha & coriander
