Rice Buddha Bowl

Serves 1:
Ingredients
- wild rice (I use left overs, use packet rice if you want to speed up the process)
- halloumi
- 2-3 tbsp black beans
- 2-3 tbsp sweetcorn
- 2 tbsp pineapple
- 1/2 avocado
- sriracha
- coriander
Method
- Cook the rice for 18-20 minutes or according to packet instructions
- Fry the halloumi on a medium heat until browned and flip
- Add black beans, sweetcorn, pineapple, avocado, sriracha & coriander
