Tuna ‘Mayo’ & Avocado on Crispbreads

Tuna ‘mayo’ & avocado on wholegrain crispbreads is such an easy yet delicious lunch that you can bring to work with you. Pack the crispbreads separately and pop the pre-made tuna mayo that takes less than 5 mins to make into a tupperware. It’s so easy to assemble at work.

Ingredients

  • 1/2 can canned tuna, drained
  • 2-3 tbsp natural or greek yoghurt
  • 5-6 slices of cucumber, quartered
  • 5-6 cherry tomatoes, quartered
  • Parsley, finely chopped
  • Salt + Pepper
  • Balsamic glaze
  • Wholegrain crispbreads
  • 1/4 avocado, thinly sliced

Method

  1. Mix the tuna, yoghurt, salt, pepper, cucumber, tomatoes, parsley together. If too dry, add a bit more yoghurt
  2. Spoon the tuna ‘mayo’ onto the crispbread, add the avocado and balsamic glaze

It’s recommended that we eat 2 portions of fish per week, one oily and one white such as tuna. Fish is a good source of Vitamin D and contains omega-3 fatty acids which can improve our brain function and hearth health and helps to reduce our cholesterol and risk of heart disease.
