These Almond & Coconut Cookies are a delicious recipe if you are looking for a different flavour to the classic choc chip recipe!
Ingredients
- 2 cups almond flour (or ground almonds)
- 1/2 tsp baking Powder
- 1/2 tsp bicarbonate of soda
- /14 tsp salt
- 1/3 cup softened coconut oil
- 1/2 cup coconut sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp smooth peanut butter (optional)
- Dark chocolate (for melting)
Method
- Line a baking tray with parchment paper and bake at 180 degrees for 10 minutes or until golden
- In a bowl whisk together the almond flour, baking powder, bicarb soda and salt.
- In a separate bowl whisk together the coconut oil, coconut sugar, egg, vanilla extract and peanut butter
- Add the wet ingredients to the dry ingredients and fold until mixed. Bake for 10 minutes.
- Melt the chocolate and add on top of the cookies with a sprinkle of salt as soon as they come out of the oven so they’re still hot.
- Leave to cool and enjoy
