Crunchy Dark Chocolate Quinoa Bites

These crunchy chocolate quinoa bites are SO good and are a healthy-ish snack providing lots of protein, fibre, healthy fats and nutrients from the peanut butter. Dark chocolate also contains polyphenols which are good for our gut microbes. Good news is that these taste pretty rich and are filling due to the high protein and fibre so it’s difficult to eat a lot of them in one sitting! Enjoy 🙂

Ingredients

  • 180g tri-colour quinoa (uncooked)
  • 200g dark chocolate (70%)
  • 3 tbsp peanut butter
  • Pinch of salt
  • 3 tsp oil

Method

  1. Preheat oven to 180 degrees and line a baking tray with parchment paper
  2. Rinse the quinoa with cold water and spread evenly across the baking tray to dry for 15-20 minutes
  3. Heat a large pan with 1 tsp oil on medium-high heat. Add half of the quinoa and stir frequently, you will hear popping after a few minutes. After 4-5 minutes most of the quinoa will be popped and you can pour the quinoa onto a plate. Repeat with the rest of the quinoa (doing it in two batches gives space for the quinoa to pop in the pan).
  4. Melt your chocolate with a small amount of oil. Stir in the peanut butter, quinoa and a pinch of salt until combined.
  5. Pour the mixture into the lined tray and refrigerate for 2-3 hours.
  6. Slice into squares and store in an airtight container in the fridge.
