Triple Chocolate Cookies
Makes 16
Ingredients
- 200g softened butter (make sure it is softened. Put it in the microwave if not. But don’t use melted butter)
- 200g caster sugar
- 100g light soft brown sugar
- 1 egg
- 375g self raising flour
- 300g chocolate (100g dark, 100g milk, 100g white)
Method:
- Preheat oven to 180 degrees
- Cream butter and sugar together – mix for about 5 minutes until it’s gone fluffy and paler
- Add in egg and mix until completely combined
- Add in flour. Mix gently until combined – don’t overmix
- Cut chocolate into small pieces mix into mixture to combine
- Roll them into balls and place them onto a baking tray with parchment paper
- Bake for 11 mins and leave to cool

Tip: Only a small family? Just bake 4 and freeze the rest of the dough ball. Bake one when you fancy one! Bake for 13 minutes and leave to cool
