Chicken, Mushroom & Leek Pie

Serves 4

My chicken, mushroom and leek pie is the ultimate pie that you will want this winter! It tastes absolutely delicious, the sauce is light using stock and creme fraiche instead of flour, and it packs in 5 plant points. Read about plant points here

Ingredients:

  • 4 chicken breasts
  • 2 leeks
  • 1 onion
  • 300g mushrooms
  • 2 tsp mixed herbs
  • Puff Pastry
  • 3 tbsp creme fraiche
  • 200ml Vegetable/chicken stock
  • Olive oil
  • Salt and Pepper

Optional: Serve with mash potato and sesame broccoli for extra fibre and nourishment

Method:

  1. Sautee onions and leeks until softened. Add mushrooms, salt and pepper and fry for 5 minutes
  2. Add chicken. After 10 minutes or until the chicken is very nearly cooked, add creme fraiche, stock and simmer for 10 mins or until sauce thickens
  3. Pour the chicken/veg mix into your pie dish. Cover with one layer of puff pastry, folding the corners over the top of the pastry
  4. Cook for 25-30 minutes at 190 degrees
  5. Serve with mash potatoes and sesame broccoli
