Cauliflower, Chard & Tofu Traybake served with black beans & dahl

Serves 3
This delicious and simple traybake is easy to make in large quantities and packed full of flavour and nutrients such as protein and fibre. It can feed a family of 4 or have leftovers for lunch the next day!
Ingredients
- 1 cauliflower, chopped
- 6 stalks of chard, chopped
- 1 x pack of tofu, cubed
- 1tsp sumac
- 2tsp za’atar
- 4 tbsp black beans (I used Bold Beans)
- 2 tbsp coconut yoghurt
- 1 tbsp harissa paste
- Vegetable oil
- 1 Merchant Gourmet packet of dahl (serves 2)
Method
- Heat the oven to 200 degrees fan. Mix together the chopped cauliflower and chard with the za’atar, sumac and vegetable oil on a baking tray and roast for 15 minutes.
- Add the cubed tofu and roast for another 20 minutes until everything has browned.
- 5 minutes before the roasting veg is done, pour the contents of the dahl into a saucepan and cook on a medium heat with the black beans until hot
- Remove the veg from the oven and mix in the harissa paste. Serve with dahl and a spoon of coconut yoghurt
Buying the dahl packet is optional, of course you can make your own if you have more time.
