Salmon, lemony asparagus, roasted vegetables and mash

Ingredients

  • Salmon fillet
  • Asparagus
  • lemon
  • peppers
  • courgette
  • carrots
  • dried mixed herbs
  • paprika
  • potatoes
  • salt and pepper
  • 1 knob of butter
  • Splash of milk

Method:

  1. Boil your potatoes for 20 minutes on a medium heat. Leave to cool for 5 mins. Mash with a fork or masher mixed with some milk and butter
  2. Roast the vegetables for 30-40 minutes at 200 degrees with mixed herbs and paprika
  3. Meanwhile, cook the salmon fillet for 15-20 minutes at 180 degrees. Check it’s cooked through
  4. Steam the asparagus
  5. Serve with a squeeze of lemon
