Rice, Avocado & Black Bean Bowl

Serves 2

This delicious rice avocado and black bean bowl is so fresh and it’s very quick & easy to make

Ingredients

  • Wild Rice or Jasmine
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 small avocado, sliced
  • ½ small can sweetcorn
  • ½ can black beans, drained and rinsed
  • 3 salad tomatoes, chopped
  • Juice of 1 lime
  • Bunch of coriander, chopped
  • Pineapple pieces (from a can is fine too!)
  • 1/2 small red onion, thinly sliced
  • Optional: sriracha or chilli oil
Method:
  1. Cook the rice according to packet instructions. When it’s nearly ready, make sure there is no more water in the pan to drain, stir in the soy sauce and rice vinegar. Add to your serving bowl.
  2. Whilt you are waiting for the rice, chop all ingredients and add to your bowl. Serve with juiced lime and optional chill oil/sriracha if you like spice
