Summer Salad: Lentil, feta & cherry tomatoes

Ingredients

  • 1/3 can black lentils
  • 80g cherry tomatoes
  • 1/2 small red onion, thinly sliced
  • 80g beetroot, cubed
  • 80g cucumber, quartered
  • 10g feta
  • Olive oil, drizzle
  • 1 tbsp mixed seeds
  • Fresh mint, thinly cut

Method

  1. Chop and add everything into a bowl
  2. Drizzle olive oil and add fresh mint
