Heart Healthy Roast Salmon

A heart healthy omega-3 rich meal and a quick dinner to make mid-week. You can use any vegetables and roast them with the salmon if you prefer. For more ideas, see more nutrition tips here
Serves 2
Ingredients
- 2 Salmon fillets
- 2 handfuls of tenderstem broccoli
- 2 handfuls of kale
- 6 stems (and leaves) of chard
- Couscous
- 1 tsp Bouillon
- Chilli peanut oil
- Optional: 1 tsp sesame seeds sprinkled on salmon
Method
- Preheat the oven to 180 degrees.
- Place the salmon on a baking tray and cook for 15 minutes or until cooked through
- Fry the broccoli, chard and kale on a high heat in chilli oil for about 7-10 minutes or until cooked
