Healthy Banana Pancakes

Serves 2
Ingredients
- Vegetable oil
- 2 bananas
- 3 large eggs
- 5 tbsp flour
- Optional: 1 tsp cinnamon
Toppings:
- Peanut butter
- Honey
- Frozen berries
- 1 tbsp chia seeds
- Dash of water
- 1 tsp honey
Method
- Mash the banana in a bowl.
- Crack the eggs into the bowl and add the cinnamon and flour. Hand whisk until combined.
- Heat a pan on a low heat with a drizzle of oil. Once hot, pour the pancake mixture onto the pan in small circles, or the size that you want to eat your pancakes in. I made 8 small pancakes and stacked them on my plate. Cook for 3-4 mins each side, flipping them when they have browned.
- Whilst the pancakes are cooking, add frozen berries to a pan on a low heat with a dash of water and chia seeds. Allow to thicken and serve on top of the pancakes.
- Add peanut butter, greek yoghurt and honey and enjoy
