Egg Fried Rice, Black beans & Edamame

This egg fried rice, black beans & edamame recipe is soo tasty and SO easy. I made it raiding my fridge/cupboard ingredients and it turned out so delicious. If you have avocado, I think that would top this dish.
Ingredients
- 150g white rice
- 1 tsp veggie stock
- 3 eggs
- 1 can black beans, drained
- 2 handfuls edamame, frozen
- 1 red onion
- 1/2 courgette
- 1 tsp mixed herbs
- olive oil
- 2 tbsp soy sauce
- Optional: sriracha sauce / chilli flakes
- Optional: 1/2 avocado, sliced
Method
- Boil rice according to packet instructions
- On a medium heat, add a drizzle of olive oil to the pan, then add the onion and courgettes until softened (about 5-7 minutes).
- Add the frozen edamame beans, black beans and mixed herbs. Add soy sauce and mix altogether.
- In another pan over a medium heat, crack the eggs into the pan with a pinch of salt. Slowly start scrambling the egg with a wooden spoon. When it’s nearly cooked, stir in the rice (drain first if needed).
- Serve on your plate with the veg, avocado and sriracha or chilli flakes
