This delicious sweet potato and lentil soup serves 6 people and is the perfect recipe to batch cook to have for lunches later in the week.
Ingredients
- 4 medium sweet potato
- 100g red lentils
- 150g tomatoes
- 300ml soy milk
- Juice of 1 lime
- 2 onions
- 1 apple
- 4 garlic cloves
- 20g coriander
- 1 litre of stock
- Olive oil
- 2 tsp curry powder
- 1 tsp cumin powder
- 2 tbsp mixed seeds to sprinkle on top
Method
- Add olive oil followed by the curry powder and cumin into a pan on a medium heat and cook for a few minutes.
- Add the onions, garlic, coriander, ginger and sliced apple and cook for 5-7 minutes or until they are browning and softening.
- Chop and add the sweet potatoes, leaving their skin on for extra fibre, along with the stock, lentils, milk, salt & pepper. Cover with a lid and cook for 20 minutes, stirring occasionally.
- Blend until smooth or the consistency you like. Sprinkle coriander and seeds on top. Serve with toasted bread
