Chocolate Caramel Wafer Cookies

Dark chocolate and caramel wafer cookies are so easy to make and taste really good.

Ingredients:

  • 200g softened butter (make sure it is softened. Put it in the microwave if not. But don’t use melted butter)
  • 200g caster sugar
  • 100g light soft brown sugar
  • 1 egg
  • 375g self raising flour
  • 400g chocolate (200g dark, 200g caramel wafer)

Method:

  1. Preheat oven to 180 degrees
  2. Cream butter and sugar together – mix for about 5 minutes until it’s gone fluffy and paler
  3. Add in egg and mix until completely combined
  4. Add in flour. Mix gently until combined – don’t overmix
  5. Cut chocolate into small piecesmix into mixture to combine
  6. Roll them into balls (I do around 50g dough per ball) and place them onto a baking tray with parchment paper
  7. Bake for 11 mins and leave to cool

These cookies are so delicious and they make 20 so great if you are providing for a big group. Or if you don’t want to cook all of the cookies straight away you can freeze the cookie dough balls and bake them for 13 minute from frozen! Equally as delicious!
