Healthy Banana Pancakes

Banana Pancakes
Serves 2

Ingredients

  • Vegetable oil
  • 2 bananas
  • 3 large eggs
  • 5 tbsp flour
  • Optional: 1 tsp cinnamon

Toppings:

  • Peanut butter
  • Honey
  • Frozen berries
  • 1 tbsp chia seeds
  • Dash of water
  • 1 tsp honey

Method

  1. Mash the banana in a bowl.
  2. Crack the eggs into the bowl and add the cinnamon and flour. Hand whisk until combined.
  3. Heat a pan on a low heat with a drizzle of oil. Once hot, pour the pancake mixture onto the pan in small circles, or the size that you want to eat your pancakes in. I made 8 small pancakes and stacked them on my plate. Cook for 3-4 mins each side, flipping them when they have browned.
  4. Whilst the pancakes are cooking, add frozen berries to a pan on a low heat with a dash of water and chia seeds. Allow to thicken and serve on top of the pancakes.
  5. Add peanut butter, greek yoghurt and honey and enjoy
