Heart Healthy Roast Salmon

A heart healthy omega-3 rich meal and a quick dinner to make mid-week. You can use any vegetables and roast them with the salmon if you prefer. For more ideas, see more nutrition tips here

Serves 2

Ingredients

  • 2 Salmon fillets
  • 2 handfuls of tenderstem broccoli
  • 2 handfuls of kale
  • 6 stems (and leaves) of chard
  • Couscous
  • 1 tsp Bouillon
  • Chilli peanut oil
  • Optional: 1 tsp sesame seeds sprinkled on salmon

Method

  1. Preheat the oven to 180 degrees.
  2. Place the salmon on a baking tray and cook for 15 minutes or until cooked through
  3. Fry the broccoli, chard and kale on a high heat in chilli oil for about 7-10 minutes or until cooked
