Flaxseed Crackers
These flaxseed crackers are perfect for cheese & cucumber – just in time for Christmas – or dipping into hummus and they are very good! They are very high in fibre so supports weight management, blood sugar levels, digestion and they are a good source of healthy fats.

Ingredients
- 200g ground flaxseed
- 200g mixed seeds (I use pumpkin, sunflower and linseed)
- 200g flour
- Approx 300ml water
- Sprinkle of salt or soy sauce
- Chilli flakes and fennel (to your taste)
- Dash of olive oil to make the dough stiff
Method:
- Preheat oven to 180 degress.
- Mix all of the ingredients together until a stiff dough
- Place the dough between 2 pieces of parchment paper, on a tray, and roll out using a rolling pin until its thin (use a glass bottle if you don’t have a rolling pin).
- Remove the top piece of parchment paper and score the crackers to make them easier to break when cool.
- Bake for 20-25 minutes or until crisp.
- Remove from oven and put on the wire rack to cool. Break them and store in an air tight container.
